Hokkaido Cupcakes : First Attempt ♥

Finally. I made it today. Just now. After mentioning it so many times to my bf how I’ll bake it someday. I think he’s sick of it as well. Not to mention I was in Malacca back then. And only now at home, in Sabah I finally made it.

Got the recipe from a local blogger, not sure from where. I assume she’s local based on her blog. Nasilemaklover….something.. I’m sorry for my ignorance, and thank you for the recipe. Tried it just now.

I saw it for the first time around last year, when a friend bought it for a farewell potluck. There’re so many of us, yep, many, considering the pizzas finished in one go. Well I think she bought around half dozen, and she gave some of them to a friend who’re leaving for Canada. It’s quite big and very few so I didn’t taste any of them, until today, when I saw them sold individually. So long…. yeah.. I saw them few times in my favorite bakery in Malacca, *sobs* but I didn’t buy them, considering nobody would help me to finish it.. Not even my beloved bf.. Wuwu.. – –

And one other reason, I thought it’s just sponge cake.. I could get sponge cake anywhere but today was exception.  I saw them and got this sudden crave for it. Ate half of it at home and gave mum the other half and she asked me whether I know how to do it. I do now. Ehee~♪

3 egg yolk
20 gm sugar
35 gm corn oil
60 gm milk
70 gm cake flour

3 egg whites
25 gm sugar

Method
1. Pre-heat oven to 170C.
2. Arrange paper liners on baking tray.
3. Hand whisk egg yolk and sugar till pale in colour.
4. Add in corn oil and milk, mix well.
5. Sift in cake flour, stir to combine.
6. Beat egg white until foamy, gradually add sugar, and continue beat till soft peak form.
7. Take 1/3 of egg white and use a hand whisk to mix into egg yolk batter.
8. Fold in the balance egg white with a spatula till well combine.
9. Scoop batter into pre-arranged paper liners to about ¾ full.
10. Bake for 20-25 mins

Follow every instructions. The meringue part. I accidentaly made it stiff peak before I fold them with the egg yolk mixture.. Which I’m not sure if it made any different.. Mum said it was nice but the one that I bought is softer. Idk – – Guess I’ll have to make it again to be sure. Nyan! =3

It was good for me, considering I ate two of them and I don’t really go for sponge cake.

And the funniest part is that I even panicked when I saw how pale the top of the cupcakes are. (And it’s just about 15 minutes in the oven) And not to mention they are so perfect that I stared at them, waiting for a crack to appear on the surface. Am I being silly or plain crazy? ><

Mother’s Day

I forgot bout the Mother’s Day. Oh no, not that. I wasn’t sure I still keep the picture cuz I was pretty sure I deleted them after I post them on instagram and boy I was wrong.

Anyway ♥, as for Mother’s Day, I made Red Velvet Cupcakes with Cream Cheese Frosting. For three special mothers – mum, my pregnant sister and her mother in law. She came over to visit us in Kk while my sister came from Tawau.

Vanilla Cupcakes with Chocolate Oreo Frosting

It’s Teacher’s Day recently and mum asked me to make a simple cupcakes for her class. Basically the students collected money and some of them are for the cupcakes. Not that much pictures. I was exhausted from wall climbing in the evening, went home and started baking until morning. Shouldn’t watch tv while frosting the cake. Ha. Ended up doing it till 5am. Lol.

I use basic Vanilla Cupcakes recipe and came up with the frosting myself. Was gonna use vanilla @ magical frosting + crushed Oreos, ended up adding chocolate and puff!! Chocolate Oreo Frosting. ♥

My First Crepe Cake

Chili Vanilla Crepe Cake. Ha! Well it’s actually Vanilla Crepe Cake but I decided to add chili at the end so there you go – Chili Vanilla Crepe Cake. Luls. I first saw the crepe cake while walking around the mall not long ago. Wanting to have a bite but… seems expensive. Oh niisa! How kedekut! (cheapskate) Hahaha..! 

And then I got back I googled them – crepe cake and walah! I discovered crepe cake for the first time! I feel like katak di bawah tempurung now… (outdated person) *feeling down* Ughhh.. Anyway I stared at the screen for hours.. The one they made for wedding is simply gorgeous! I’m in love! Haha.

And yesterday, I decided to make it. So I went around searching for a recipe on the net and it seems that 3 out of 5 websites I went to use the same recipe. I read the review and most of the problem encountered while making the crepe cake is making the crepe itself. Too thin, too thick, sticking to the pan, blah blah blah and so on… Making the batter is easy but the crepe? Ah! What the hell, bring it on!

And guess what? They’re wonderfullllll! Awhhhh! Every crepe I made is purrrrfect! Haha! xD

As for the filling, I have leftover magical frosting, and I wasn’t in the mood to make any cupcakes. I skipped with the original filling and used this instead. I had only blue coloring and decided to color the frosting a bit. Boy, I shouldn’t do that! T.T

Ah.. My bf loves caramel so I drizzles them a bit on the cake.

Final product. The crepe cake tasted good. But the texture doesn’t match with the frosting. It’s good.. (well which part vanilla-related product is not good???) but rather greasy because of the butter in the frosting. Definitely have to use the original filling in the future.

Cupcakes for Wedding Doorgift

Wedding Doorgift. Really?
Yep, yep. It’s a tradition for well, I’m not sure about Indians, but for Chinese and Malays, yes they give doorgift to guest who come to the wedding. I’m not sure whether we Kadazandusun do it cuz I remember attending two weddings (one of it was my aunt’s), and no, no doorgift received. Hahah! xD But if the wedding reception are held in a hotel, yea I’m sure every guest will get something. I’ve seen chopsticks, fans, cakes and chocolates in a box as a doorgift for weddings held in the hotel. As for Malays, I’m not sure if people still give ‘bunga telur’ (simply boiled egg with some decorations) nowadays. Maybe in kampung (village) where they organize everything by themselves, still? No idea! But I do know that nowadays anything can be a doorgift! For instance, my other sister ordered mini cheese tarts from her friends. My mum… Chocolates, maybe? That is from our family side. The groom side? IDK But I See guests went back with their hand fulls of doorgifts!
As for my sister’s wedding reception, mum suggested making cupcakes (again!). There’s No way I could bring my pastry equipments from Sabah to Malacca so I crossed my fingers and hope there’s some shops that sells everything I need. Jajaja..! Well after few days of searching I finally found it, not far from Ayer Keroh where I’m staying. Thanks to my beloved bf who drove me around to look for it. After I got everything I needed, I started making the cupcakes two days before the wedding. Well I have to. And I’ve already checked everything. Ngahhh! And these are pictures of them in the making. Well I didn’t snap everything step by step cuz it’s tiring to wash my hand everytime I hold my phone.
